Fleur de Caramel is a pastry company created by Yohann DAMBO. We love revisiting local pastries, marrying the flavors that rocked our childhood and adding a modern approach.
We started a year ago as a traveling pastry shop to the great satisfaction of our customers who over the months have become loyal and also friends.
We work with professionals that sometimes you already know. We are also present for events and events such as weddings, baptisms, births, baby showers, birthdays and many more.
All our customers will tell you that the taste of our creations is a sweet, refined, light taste while enhancing the Caribbean aromas.
This is what it is about: we want to represent Martinique with all its flavors. Make a quality pastry that has the great taste that transports you every time you take a bite.
Today we want to have a first point of sale. Many clients ask us where we are, where to find us.
We want to open our first pastry shop thanks to you, thanks to your support.

We make sure to modernize without altering the local pastries. In Martinique, we have a know-how that our grandparents already had. Fleur de Caramel takes this know-how and adds a touch of flavors combined with delicacy. We want to make and rediscover the patisserie of Martinique, here and elsewhere. Indeed, we hope to be able to export our pastries to Europe. Martinican pastries deserve international recognition.
I am Yohann DAMBO, manager of the FLEUR DE CARAMEL pastry shop. We are pastry chefs from father to son. Indeed, it was my father who passed on his passion to me.
I first apprenticed in the field of cooking and then pastry making at the Apprentice Training Center (CFA) of Ducos.
I worked at the CARAYOU hotel as a pastry chef and I did my internships and apprenticeship periods there. In December 2014, the passion being stronger than me, I decided to set up my own business.
I followed management and hygiene training and in October 2016, I created my company FLEUR DE CARAMEL.
My passion is first and foremost my country. Fleur de Caramel aims to introduce the flavors of local pastries. We have pastry traditions that tourists appreciate and that anyone can appreciate in Martinique.
We must keep these traditions which are part of our cultural heritage.
This is Fleur de Caramel's fight. We want to show that the young people of Martinique invest in their country.
I have a project to employ young people in integration. And also to train young pastry chefs who, like me before them, will need internships and training.
